The Great Gingerbread Adeventure Part 1 Gingerbread Spice Mix

You know what my favorite part of November was? Learning how to make pumpkin pie spice and expanding that on to learning how to make pumpkin pie and pumpkin pancakes. So almost immediately after I finished writing my pumpkin pancake write up, I began to research Christmas spices.

My first thought was to try to make a peppermint mocha mix, but there is really nothing to it and all you need is chocolate shavings and mint oil (or something like that). So I sat on it for a few days. And then while I was perusing instagram one day, an English friend of mine was making gingerbread cookies with her children. That's when I realized that if pumpkin spice defines fall, then gingerbread should define winter. (And it might have, if peppermint mocha weren't so damn good!)

So here we being my winter gingerbread obsession with some gingerbread spice to spruce up my morning coffee through December.

I love that most of the spices required are used in my pumpkin pie spice mix. So creating the gingerbread spice mix was easy peasy. The only thing I had to get was star anise. (which luckily we have at my job, so I was able to take some home and grind it myself!)

After that all you need is to measure out your spices and mix them together. And voila you have gingerbread spice!

I've been using it in my coffee all Decemeber long (I know its only been 4 mornings!) and it definitey puts me in a Christmas cheer (even if this weather really doesn't)

(And yes even Alf, enjoys it in his coffee)
